Laura’s Sweet Potato Curry

This recipe received rave reviews from MIL and DH:)

2-3 medium sweet potatoes, cut into 1″ chunks
1 onion, diced
1 can coconut milk
1 clove garlic, diced
mustard seeds, probably about 1 tsp
cumin seeds, again, probably 1 tsp
I sort of wing it with the rest of the spices, some turmeric, some chili powder, some roasted cumin, whatever sounds good really
oil

get the oil hot in a large pan, saute the onion till translucent, add garlic, mustard and cumin seeds, fry till they stop sputtering, then add the rest of the spices and stir for a couple of minutes (This is probably pretty standard for you)  Then when things look/smell right, add the sweet potatoes and coconut milk, and 1/2 can of water.  Stir well, and turn the heat down, and simmer for 20 minutes or so, until the potatoes are soft.  I usually add salt and pepper at the end.
