Chicken á l’orange

Ok, not really, but here goes! :P  

Ingredients:

  • 3-4 chicken breasts/or whatever parts you like – you can also use pork loin and it turns out great (about a pound and a half or two?)
  • 3-4 long celery [heart] stalks, i like cutting them on a bias, so to speak (á la Chinese veggie dish), but you can do as you please
  • 1 medium onion or more if you like onion, your preferred slice/dice/cutting method
  • 1.5-2 cups orange juice (add more if you want it saucier)
  • 1 cup chicken or veg broth (add more if you want it saucier)
  • Splash (half a cup?) of coca-cola (if you’d rather skip it, just sub for broth)
  • seasoning salt/pepper, and enough oil to pan-fry the chicken and veggies.

* Optional: Dash of sesame oil, raisins, any other fruit, or veggie!

Instructions:

Season the meat (I sprinkle it with Lemon/Pepper salt from Lawry’s but we all have each our fave, for different occasions!). Turn heat to med-high. Prep veggies.

Brown the meat, add onions and celery. Season again if you wish (God knows I do -and add your dash of sesame oil now if you’d like).

Add coke, juice, and broth. I usually also put chicken bouillon to my broth (but that’s b/c i don’t know how to season without it and normally skip the salt, or use less of both, or whatever!). Let simmer until chicken is cooked through (you can also let the sauce ‘reduce’ and the chicken will fall off the ‘bone’ if you have any in there!)

Serve with white (either steamed or white Mexican) rice.
